The downside is that whatever you do to the fortress in terms of damage remains when you take over. I use this method more often than I care to admit since it is simpler and more cost effective in terms of casualties. Typically the simplest way to attack any fortress is to use artillery to knock a hole in its wall through which your forces may then pour in. The variations in strength and design are almost purely aesthetic. Other than these minor distinctions I would venture to suggest that most forts and therefore sieges in the game are the same, essentially large cannon-mounted walls.
